Bill has continued to keep his idary for the 2010 Vintage. He has now bottled his wine and his last entry reads "

Perfect colour and taste.
Very happy with result.
Best wine yet...

In his email Bill says" 

Hi Brian
 
I have finally bottled my wine, and It’s perfect!
Out of 150kg of grapes I bottled 102 bottles.
Attaching my completed 2010 journal /diary.
The Ph level  3.9 was a bit higher than last year’s  but I didn’t want to add any tartaric acid this time.
I’m very happy with the taste, and  the strong colour.
Overall super. I will drop in a bottle to you when I’m in the area
I have been reading the progress of next year’s vintage on your website.

Crushed by hand crusher repeated crushing 4 times per box and de-stemmed by hand
Grapes excellent quality picked less than 20hrs ago.
Filled fermentation vat near full just 150mm from the top

Inoculated with Enofern VQ15 Yeast. 38g/150litres diluted in 380mil of warm 35C water. Wait 20min and add to juice

Ph still high but it tastes ok
Experimented on 1 lit added tartaric and reduced ph to 3.6 but tasted like lemon juice.
